Summertime hits



It is beautiful out.

No wait, let me say it again for those who feel differently about heat than I do. It is hot. It is humid, with clear sunshine interspersed with rather-impressive thunderstorms and torrential rain.

Now I'll admit, I am a lucky one; I am one of those sorts that lives for heat and revels in temperatures others may consider rather sweltering. Dry heat or sticky with humidity, I will always choose a day that is blistering over a day that is remotely cold.

I even take particular joy the dramatic tendencies of our climate. There is something wholly romantic about a midday thunderstorm. The day suddenly turns to dusk, the air heavy and thick with moisture; and afterwards, who cannot enjoy the green, green, green smell of wet grass and soaking leaves, and the reward of a cool breeze. Even as I write this, rain is pouring through trees alight with sunshine and I can hear not-so-distant peals of thunder.

But, even though I consider the weather to be lovely and sultry, I can see my loved ones virtually wilting as the days go on. And so I feel compelled to aid as only I know how - with food.

While I will admit my days have been busier as of late, what with the arrival of our newborn son and the constant entertainment that is his big brother, I have still managed to get back in the kitchen. Like the lovely familiarity of a tune you've hummed for a lifetime, getting back to cooking and baking has brought me the satisfaction of beloved habits. In this mood I have been looking over my cookbook collection, rediscovering old favourites that somehow seem new again.

With that in mind, I have brought together a few of my best-loved recipes I hope will keep you cool for the summer nights ahead.

Dear Mr. Truant Officer*

Once these, the long legged days of August saunter in, I find it impossible to focus on anything other than gallivanting about. But who can blame me? With peach festivals, Rotary-sponosed rib cookoffs, world-class food fairs, you can understand my distraction.

Case in point. When you find yourself making espresso-laced versions of (almost kitch) molten lava cakes, for the simple reason that it is Tuesday night and it is a gorgeously cool evening, you know that you are lost.

Though my school days are a distant memory, my thoughts have turned towards notions of holidays and diversion, of idle pastimes and fleeting pleasures. But lest you think I have abandoned all thoughts of responsibility, I shall be taking you all along with me on a little field trip to St. Jacobs later this week. We will wander through aisles upon aisles of antiques, take a gander at local artisans and gather up armfuls of gorgeous produce, baked goods and specialty meats from the farmer's market.

My apologies for my absence, but please don't turn me in.



Espresso and chocolate fondants
My variation of theserecipes.

Ingredients
1/2 cup (1 stick) unsalted butter, plus more for greasing the pots
2 ounces bittersweet chocolate, chopped
3 ounces semisweet chocolate, chopped
2 eggs
1 teaspoon instant espresso powder
1/2 teaspoon vanilla extract
2/3 cup caster sugar
3 tablespoons all-purpose flour

Preheat oven to 400°F (200°C). Grease 4 x 150ml ramekins with butter (see note).

In a double boiler, or a bowl placed over a pan of just simmering water, melt the butter and chocolates together. Stir to ensure even and gentle melting of the chocolate; when just melted, remove from the heat and set aside to cool.

Meanwhile in a small bowl, whisk together the eggs, espresso, vanilla and sugar until the mixture becomes thick and slightly pale in colour. Add the cooled chocolate, whisking to blend well. Finally, stir in the flour until just combined.

Divide the batter among the prepared ramekins; bake on a baking sheet for 17-20 minutes, or until the tops are crevassed and cracked while the oozing underneath. Cool only for a moment and serve hot.

Notes:

• I use these little 150ml pots that I'm terribly fond of as the cakes will soufflé up just a bit and offer a charmingly springy top. However, you can also use a slightly larger ramekin (though I would not go larger than 250ml or 1 cup) for a denser, more deeply cracked fondant.

Unto the breach



As a child of the 1980s, I have a deep affection for that era of roller skate - the ones with four wheels and the bright red, eraser-like stopper attached to the toe. I spent many an hour touring the neighbourhood in my skates, confident as can be.

Flash forward 20 years later and you can imagine my trepidation when my dear Sean strapped brand new rollerblades on me and assumed I would be steady on my feet. Facing the downhill slope of a rather steep hill, little did he expect the athletic debacle that would follow.

To make a long story short, I ricocheted off of a fence once or twice on my way down. Since then if faced with the slightest of declines, I am happy to veer off the road, sit myself down in the grass and watch the world roll by.

In this case I am all too happy to indulge my cowardice.

But one arena in which I have rarely shown fear has been the kitchen. Whether it was youthful exuberance or sheer naive ego, I would be hard pressed to remember a recipe that I have shied away from due to lack of experience. I will either place my confidence in quality of the recipe or in my own common sense, and then pray for the best.

That is not to say that errors have not been made; I could tell stories of some spectacular culinary failures that culminated in me laughing and crying all at once, as I reached for the phone to order takeout. But for whatever reason, these catastrophes have never fazed me. A simple shrug of the shoulder later, a wipe down of the counters and I am usually ready to tackle my next attempt.

It was with this touch of hubris that I made my first soufflé. Not smart enough to heed the many horror stories of fallen hopes, I happily whipped, folded and baked my way to airy perfection. Maybe it was assuredness that was the secret of my success. Maybe it was my assumption that all will be well was what made it so. Since that triumph, I have never looked back; both savoury and sweet offerings have graced our table. I have fallen in love with soufflés, with their luscious eggy density and slightly tender belly.

This corn and cheddar version has been a favourite since first taste. With a subtle background heat playing off of the sweetness of fresh corn, it is a wonderful balance of flavours for a light summer supper. The procedure is surprisingly simple and forgiving; stir the roux patiently, do not overwhip your egg whites, fold the batter gently. Bake until set without peeking in the oven, and your bravery will be rewarded with awe at the table. Who needs a greater ego-boost than that?

Sweet corn and white cheddar soufflé, with herbs and chili

Ingredients
Kernels from 2 ears of fresh corn
1 medium onion or 2 large shallots, cut into small dice
1 small red chili, finely minced
Salt and freshly ground black pepper
3 tablespoons butter, plus more for greasing the ramekins
2 tablespoons plus 1/3 cup finely grated Parmesan cheese, separated
3 tablespoons all purpose flour
1/8 teaspoon cayenne pepper
1/8 teaspoon ground nutmeg
3/4 cup milk
3 eggs, separated
1/2 cup grated aged white cheddar
1 teaspoon chopped parsley
2 teaspoons chopped basil
1 tablespoon chopped cilantro (coriander)

Preheat oven 375°F (190°C). Lightly grease four 3/4 cup capacity ramekins with butter, then coat with Parmesan.

In a sauté pan over medium heat, melt one tablespoon of the butter. Add the corn, onion and chili and cook, stirring, until the corn is tender and the onion is translucent. Remove the vegetables to a small bowl and set aside to cool.

In the same pan over medium low heat, melt the remaining butter. Whisk in the flour, cayenne and nutmeg, then cook this mixture for about 2 minutes. Slowly add the milk, whisking constantly to combine. Continue to cook, for about 3 minutes, until the sauce is thick and smooth. Turn off the heat, whisk in egg yolks, cheddar, remaining Parmesan and herbs. Stir in the corn and vegetable mixture. Set aside.

In the bowl of a stand mixer with the whisk attachment, or with a hand mixer, beat the egg whites to stiff (but not dry) peaks. Using a spatula, fold one third of the egg whites into the soufflé base. Continue to fold each third in, only until just combined.

Divide the soufflé batter among the four prepared ramekins. Sprinkle with additional finely grated cheddar or Parmesan, if desired.

Gently place ramekins into a roasting pan or large casserole dish. Fill the pan with water from a recently-boiled kettle, until it comes halfway up the sides of the ramekins. Bake in the preheated oven for 20 minutes, until crowned and golden.

Serve immediately, makes 4.

Notes:

• For a more impressive crown to your soufflé, rather than one that will just coyly peek over the edge of the dish as seen here, use a slightly smaller ramekin.
• When folding in the egg whites, I usually let a few streaks of white to remain for my first two additions as I know those will dissipate with the last addition. This allowance will prevent you from overworking the batter and deflating the volume.

The lifespan of a currant



A peek at what has kept me busy the last few days. Red currants, fresh from my brother's garden, fill an iconic Ontario basket.



The fruit takes a quick cooling dip before heading off to the steam bath otherwise known as the jam pot.



I used a recipe, but not the method, from the formidable Mrs. Beeton, lifted with the addition of some fresh lemon juice and rind. The rind lends a familiar sticky tang, making the finished product worthy of its new moniker "jamalade."

Shoulda, woulda, coulda ....



This past weekend, I was going to do a lot of things. I was going to deal with that pile of laundry. I was going to read a bit more of that book on my nightstand. I was going to wax rhapsodic, again, about the gorgeousness of the season. I was even going to make tremblingly pretty Gewurztraminer gelées, studded with plump blackberries.

You will note, I was going to do those things. In fact, I did not end up checking any of those tasks off my list. The weekend turned out to be a fabulous one, and I was taken with other diversions. Come Monday my mood was so bright that I felt the need to celebrate the weekend's end; it was that good.

The aforementioned berries were glorious specimens of Loch Ness blackerries from the kind folks at Schouwenaar Orchard and Vineyard. Large and glossy black, the pine cone shaped bundles were simply addicting. Starting out with a full flat of these babies, we'd munched our way through the majority by Sunday evening.

Too perfect to mar with cooking, too pretty to hide under mounds of cream, the crowning glory of a fruit tart seemed destiny for the last of the tempting fruits. Wanting something as special as the weekend had been, I decided upon Martha Stewart's pistachio pastry crust for my base. More of a shortbread than a traditional pie crust, butter is even more enriched by the addition of ground nuts. The pistachios in turn tint the pasty a delicate chartreuse. My buoyant mood was not one that allowed for the patient stirring required for a pastry cream, so I turned to a simple alternative; thick mascarpone whipped to luxurious lightness, barely sweetened and scented with vanilla.

The perfect backdrop to the blackberries, the perfect end to the perfect weekend. No agenda needed.



Blackberry tart with pistachio crust

Ingredients
Pistachio crust
1/4 cup heavy (35%, whipping) cream
All purpose flour, for dusting
3 ounces (85 grams) white chocolate
2 tablespoons icing (confectioner's) sugar
1 teaspoon vanilla extract
9 ounces (275 grams) mascarpone cheese, at room temperature
2 pints blackberries
1 tablespoon black currant jelly or blackberry jam
1 tablespoon unsalted, hulled pistachios

Prepare pistachio pastry dough as per recipe. On a lightly-floured work surface, roll out chilled dough to a 1/4" thick, 12" round. Lightly press dough into a 9" fluted, removable bottom tart pan, then chill for 10 minutes. Using a paring knife, trim excess dough. Scraps and leftover dough can be rerolled once and then baked as shortbread cookies.

Preheat oven to 375°F (190°C). Prick (dock) pastry all over to prevent puffing during baking. Line with parchment paper, leaving an overhang over all edges. Weigh down with pie weights, uncooked rice or dried beans, and bake for 20 minutes. Remove parchment and bake an additional 10 to 15 minutes, or until the shell is lightly browned all over.

Cool on a rack for 10 minutes, then remove tart ring to cool completely.

Melt chocolate using a double boiler or microwave, then set aside to cool slightly. Once cool, use a pastry brush to thinly coat the inside of the cooled shell with chocolate. Chill for 10 minutes or until set.

Meanwhile, in the bowl of a stand mixer fitted with the whisk attachment or with a hand mixer, beat the heavy cream, vanilla and sugar until soft peaks form. Remove from mixer and set aside. Switching to the paddle attachment, cream the mascarpone until light and fluffy. On low speed, gently stir in half the whipped cream until just combined. Using a spatula, gently fold in the remaining cream.

Fill the prepared shell with the mascarpone mixture. Chill the tart for 20 minutes to firm up the filling or prepare to this point up to 3 hours ahead of time.

Melt the jam, with a scant 1/2 teaspoon water, using low heat in the microwave. Remove from oven and stir. Set aside to cook slightly. Top the filled tart with blackberries, then lightly brush lightly with glaze. Scatter with pistachios and serve immediately.

Makes one 9" tart.

Notes:

• This filling is not particularly sweet; you may want to adjust the sugar to best suit your tastes.
• Neufchâtel, blended ricotta or cream cheese can be substituted for the mascarpone. In these cases, amount of heavy cream may need to be adjusted accordingly.
• The pistachio crust I used is not available online, but I would think that Martha Stewart's Pistachio Graham-Cracker Crust would be a fine substitution, as would a classic pâte sucrée.
• It hardly needs saying, but this pastry and filling can be used as a basis for almost any fruit tart.

To enjoyable excess



I am passionate about a lot of things. Food, fashion, family and film are all consuming pleasures of mine. But there is something I'm equally fanatical about which might seem somewhat unexpected. I love words.

Language, jargon, definitions - I find all of these simply fascinating, and have for as long as I can remember. Back in school, in Linguistics and Latin classes, lectures on morphology and derivatives were red letter days on the calendar.

Yes, I know. I'm a geek.

But I cannot help myself. I adore nuanced meanings, the way that one right word can say so much more than paragraphs and paragraphs of the wrong ones. A well-chosen phrase can be a study in succinct economy or art itself.

Mellifluous is as poetic as its definition. While lush is lovely, verdant is all the more exuberant in its profusion.

Lately though, one word has been (excuse the pun) on our lips most often - surfeit. With the local trees and fields heavy with fruit, the early summer harvests of berries, currants, sweet peas and cherries are gracing our table. Truly nothing less than luxuriant abundance, we're most often seen feasting on this bounty of beautiful produce out of hand.

However, when recently bestowed with not one, not two, but three baskets of garnet-hued cherries, I felt the little jewels deserved a bed of buttery cake to fully appreciate their depth and colour. Sweet and plump, the gorgeous orbs almost melt, turning luscious and silky while staining the almond-rich batter with their juices.

One taste, and even words aren't necessary - just enjoy.

Almond butter cake with cherries

Ingredients

1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature, plus extra for greasing the pan
1 1/2 cups of granulated sugar, plus extra for preparing the pan
4 large eggs
2/3 cup sour cream
1 teaspoon pure vanilla extract
1/2 teaspoon grated lemon zest
1 cup ground almonds
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh cherries, pitted and split in half
1/3 cup flaked almonds
1 1/2 tablespoons Demerara sugar (optional)

Preheat oven to 350°F (175°C). Generously butter a 10" springform pan, and set aside (see note).

In the bowl of a stand mixer with the paddle attachment, or with a hand beater, cream together the butter and sugar until light and fluffy. Lower the speed and add the eggs, one at a time, beating until fully incorporated. Scrape down the sides of the bowl as needed.

In a small bowl, combine the sour cream, vanilla extract and lemon zest.

In another bowl, sift together the almonds, flour, baking powder and salt.

Add half the flour to the butter mixture, beating until blended. Add the sour cream mixture, beating again and scraping down the sides of the bowl. Finish with the remaining flour and stir until just combined.

Spread the batter evenly in the prepared pan. Sprinkle over the cut cherries, the almonds and the Demerara sugar (if using). Bake for approximately 40 minutes, or until lightly golden and a cake tester comes out clean.

Notes:

• For the photograph, I used two 11"x8"x1" removable bottom tart pans. The cakes took about 30 minutes to bake.
• Alternatively, lightly toast the almonds in a dry pan before topping the tart.
• Other fruits, plums and apricots for example, can be substituted.

SHF #32: My (ice cream) craving



When Jennifer proposed the theme of this month's Sugar High my thoughts, as one who knows me at all would surely assume, turned to yearnings for chocolate.

But, though happy in those thoughts, I began to consider that which I most longed for as of late. Not a food or flavour specifically, but more of a mood or moment - I'd been pining for the arrival of summertime.

Sure, the mercury has been on the rise and the trees are well dressed in their abundant leaves, but somehow it still has not felt summer enough. It was not those broad shouldered, blue-eyed lazy days of August, where the sun smiles so brightly that the world seems lit from within.

So how could I evoke this feeling through food?

In southern Ontario, the warming months bring bustle back to farmers markets. Roadside fruit stands seem to multiply exponentially overnight. Punnets, pints and bushels make their way back into our weekend lexicon as the harvests roll in.

And the harvest inextricably tied to the season? Berries. Luscious and bursting with a sweetness born of sunshine, the ripening of Ontario strawberries coincides perfectly with the official start of summer.

Classic in every way, this strawberry swirl ice cream embodies nostalgic thoughts of childhood holidays. This is the taste of evenings on the swingset at my favourite ice cream stand; white stripes of cream coating our arms to our elbows as we sat, sucking the icy bits of strawberry until they turned supple and soft again.

Here, I wanted a taste that was purely luxurious berries and cream, and so chose to go with a dense, velvety rich vanilla custard base punctuated with tart strawberries. The psychedelic tie dye effect of broad ribbons of reddest red against the creamy whiteness was the look I had wanted, but feel free to blend the strawberries further for a more feminine hue.

Strawberry swirl ice cream
My interpretation of a variety of sources, with thanks.

Ingredients
2 cups half and half (10%) cream
1 vanilla bean, split lengthwise
A pinch of salt
5 egg yolks
1 cup heavy cream (35%, whipping)
2/3 cup plus 1 tablespoon sugar, divided
2 cups fresh strawberries
1/8 -1/4 teaspoon fresh lemon juice

Prepare an ice bath using a large bowl full of ice and water. Have another bowl, one that will fit inside the first without becoming fully submerged, set aside.

In a heavy-based saucepan pour in the half and half. Using the back of a knife, scrape the seeds out of the bean and into the saucepan, add the pod as well. Season with salt. Over medium heat, bring this mixture to a simmer. Turn off the heat and allow the vanilla to infuse into the liquid for 30 minutes.

Turn the burner back on and bring the mixture back to a gentle simmer over medium-low.

In a bowl that can withstand heat, whisk together the egg yolks and 2/3 cup of sugar until it becomes pale yellow and fluffy. Whisking constantly, pour a thin, steady stream of the half and half into the yolk mixture. Once combined, pour the mixture back into the same saucepan and return to the heat. Using a wooden spoon, stir the custard constantly until thickened and coats the back of the spoon, anywhere from 6 to 10 minutes.

Using a medium-fine mesh sieve, strain the custard into the clean bowl set aside earlier. Immediately place this bowl into the ice bath. Stir occasionally until the custard comes to room temperature. The vanilla bean can be taken at this point, rinsed and set aside to dry on a kitchen towel. Once dry, it can be used to make vanilla sugar.

Once the custard has cooled, stir in the the heavy cream. Cover and refrigerate until well chilled (I like a good couple of hours).

Meanwhile, mash the strawberries with the remaining 1 tablespoon sugar and lemon juice. Set aside at room temperature to macerate.

When the custard is chilled, follow the manufacturer's instructions to churn the ice cream. Once the ice cream is ready, remove the machine's dasher and gently fold in the strawberries and their juices. Do not overmix. Transfer to a food storage container then tightly seal and freeze for at least 2 hours.

Makes 1 quart.

Notes:

• Decadent as this version is, richer versions feature as many as 6 egg yolks for the same amount of liquid and a higher ratio of heavy cream to half and half (or milk). Choose the one that best suits your taste.
• If there seems to be too much accumulated strawberry juice, hold some back to maintain the texture of the ice cream - you do not want it to become waterlogged (well, juicelogged).
• For a pink version, rather than the marbled result here, strain the accumulated juices from the strawberries into the cooled custard before pouring into the machine. Add the strawberries through the feed tube during the last 5 minutes of churning.

There are no small parts, just small ingredients



While it is lovely when expectations are met, the greatest performances are sometimes those that are stumbled upon and steal the show entirely.

To more succinct in this particular case, stumbled upon means came home in our grocery bag.

I had intended to make something to satiate a craving for smoked salmon. I had decided upon a sandwich. I had thought I would thinly slice some red onion, sprinkle over some capers and be done with it.

But then the tomatoes arrived; Sean had gone to the store for provisions, and came back with some of the most gorgeous little beauties from the market. Golden yellow, sunset orange and robustly red, the pint of mixed varietals demanded the spotlight.

Their delicate scent courted centre-stage status; a paltry sandwich seemed too gauche for their charms. And so, the smoked salmon was relegated to the chorus line, providing the backdrop to a tomato salad-crowned tartine.

Like any good production, this light lunch offers a play of dramatic contrasts. Heavily silken folds of salmon are undercut with the twang of fresh chèvre and astringent lemon. Juicy tomatoes rendezvous with their long-time companion sweet basil, and take a tumble with saline capers and spiky, fiery red onion.

While I refrained from a standing ovation, an encore is surely deserved.

Smoked salmon and tomato salad tartine
Please forgive my lack of truly specific quantities; you can treat the list as if each item includes the modifier "or thereabouts". This is one of those dishes for which personal taste is paramount. Choose the proportions that work with your taste to best balance the salty, sour and sweet elements.

Ingredients

For the tomato salad
1 1/2 cups small tomatoes (cherry, grape, strawberry), cut into halves or quarters
1/3 cup small diced red onion
2-3 tablespoons capers, rinsed
Basil, cut into chiffonade
Fresh parsley, minced
Lemon zest
Salt and freshly ground black pepper

For the sandwich
4 tablespoons cream cheese
4 tablespoons chèvre (unaged, fresh)
2 teaspoons Dijon mustard
4 slices country bread, or 2 slices halved if large
4-8 slices smoked salmon, depending on the size
Lemon juice, freshly squeezed

In a small bowl, combine the ingredients for the tomato salad. Toss gently and season with salt (judiciously) and pepper.

Combine the cream cheese, chèvre and Dijon mustard. Beat until fully-blended and light. Season with pepper.

Lightly toast bread slices under a preheated broiler.

Spread cheese mixture over bread. Top with sliced smoked salmon and a squeeze of lemon juice. Pile tomato salad over all and enjoy.

Makes 4 pieces.

What I did over summer vacation ....



While I may have not had the opportunity to sit in front of the computer lately, I have been managing to spend a good deal of time standing in front of the stove (and grill, and oven and cutting board). True to my word, here is a list of some of the recipes that have been keeping me busy, and our bellies full, over the summer. • Honey poached peaches: Recipe below.


Honey poached peaches
If at all possible, start these peaches the day before serving. I love the visual combination of the spiky green pistachio slivers against smooth, blushed peach cheeks. It is the perfect dessert to linger over in the late summer sun.

Ingredients
3 cups water
5 tablespoons honey
3 tablespoons sugar
1 vanilla bean, split lengthways
5-6 medium peaches, about 1 kilogram in total, halved lengthways (see note)

In a medium saucepan, combine water, honey, sugar and vanilla bean. Cover and simmer for 5 minutes. Add peach halves cut side down (this may need to be done in batches), and simmer uncovered for 3-4 minutes. Turn using a pair of spoons and simmer for an additional 2-3 minutes, until the flesh is just tender when pricked with the tip of a knife or tines of a fork. Cooking time will, of course, depend on the ripeness of the fruit. Using a slotted spoon, remove to a bowl and continue until all the peaches are cooked.

Increase the heat and boil the remaining poaching liquid until reduced to a syrup consistency. The poaching will stain the syrup a pink-peach, which will deepen upon reduction.

While the liquid is reducing, use your fingers to peel the skins off the peaches and remove any remaining stones.

Pull out the vanilla pod and pour syrup over the peaches. Cover and chill, for at least an hour or preferably overnight. The longer the peaches sit, the more they will soak up the deeply aromatic liquid.

Serve as pictured with ricotta cream and a sprinkling of slivered pistachios, or over ice cream or simply as they are.

Serves 4-6.

Notes:

• If the peaches are freestone, then remove stones before cooking. If not, then pit after cooking. Leaving the peels on the peaches will not only protect the tender flesh, but also tattoo the fruit a mottled sunset hue.
• Testing for doneness on the cut side of the peach helps to hide any marks.
• My dear Sean’s mother suggests these peaches on top of Belgian waffles for a truly decadent brunch.

A moment in the sun



It seems just yesterday it was spring and I was preoccupied with thoughts of pillows of ricotta and berries; yet the calendar tells another tale. Somehow four months have slipped by, each day feeling all too short.

I have been caught in a whirlwind of family, friends and new motherhood. Learning how to function in each of those roles, all the while furtively attempting to hold on to each precious moment of the lessons.

And suddenly, it is August.

Broad, blue skies are lit with late-summer sunshine. My meagre potted garden has exploded in riotous green. The frenzied pace of high summer has abated, along with its still heat.

Evidently tempered by the relatively moderate weather, my thoughts (even if not my schedule) have slowed to an easygoing lull. Whether it is the season, or sheer exhasution, this shift in pace has allowed me a moment to reflect and gather my thoughts before we move forward.

While eloquence seems to be called for, all I can do is take it all in and smile.



I’ll be posting a list, with recipes and links, of some of the dishes that have kept us busy. I promise you will not have to wait as long as the last time.

The terrible, horrible, no good, very bad day ... that turned into a week

Monday started out with me slipping in a mud puddle. Tuesday introduced impossible deadlines to be met – and was a day that did not seem to have enough hours in it. Wednesday, well, I forget Wednesday, I’m sure it happened but I have no recollection of it. I think it was so traumatic that I blocked it from my memory.Thursday brought misunderstandings of seemingly endless proportions. And now it is Friday, and it’s raining outside.

As you may guess, I’m in a bit of a mood.

It is times like these, when I am feeling overwhelmed, that I transform from a usually capable person into a somewhat dramatic, hopeless mess. And it is times like these that the smallest of favours are the grandest of gifts.

These adorable little tomatoes for example, a co-worker brought them to me from her garden – she is a kind and thoughtful lady who never thinks twice when given the opportunity to do something for another. Perfectly ripened, almost candy-like in their sweetness and utterly photogenic, I have had the pleasure of enjoying three miniature little harvests of tomatoes, my morning brightened by a little bag of these babies waiting on my desk in the morning.

Or this lovely green dish, a gift from my dear S in apology for setting fire to one of my roasting dishes (long story involving preheating the oven without remembering that he’d hidden dirty dishes in there earlier). Smooth and sleek with its feminine fluted edge, I love the weight and feel of the ceramic — and the colour is so utterly of him (as you may have noticed, I have a fondness for white serving ware).

So things may not be as dire as they seem. Last night, I surveyed the kitchen and came across some gorgeously crusty Calabrese bread, some herbs and my darling tomatoes. Remembering a recent sunny afternoon at the Taste of the Danforth food festival in Toronto, with the company of great friends and laughter all around, I was inspired to recreate the fabulously fresh bruschetta we’d had at Il Fornello.

The first bite of crusty bread, tangy soft cheese and luscious tomatoes, and I’d banished the gloom. Such a simple pleasure, coupled with a quiet evening, had a wonderfully restorative effect. I slept soundly, and woke this morning with a renewed sense of enthusiasm to face the work ahead.

That’s when I noticed the rain clouds.

Bruschetta with tomato salad and chèvre
Bruschetta, from the Italian bruscare (to roast over coals) technically refers only to the grilled bread. My apologies that I have not included amounts here, instead just the ingredients. But truly, when in a mood like the one I’ve been in, the last thing one wants is to stress over measuring spoons. Use the proportions that best suit your palate. This is supposed to be a dish that exemplifies the “path of least resistance” – the quickest way to pleasure with minimal effort.

Ingredients

Tomatoes, grape or cherry halved, or your favourite large variety cut into manageable bites
Red onion, finely minced
Garlic, finely minced or microplaned (optional)
Basil, in fine strips (chiffonade)
Parsley, finely minced
Salt and pepper
Red wine vinegar (optional)
Olive oil
Slices of Calabrese bread, or any other crusty bread you like
Garlic (left whole)
Chèvre

Preheat broiler.

Combine tomatoes, onion, garlic and herbs in a bowl. Season to taste with salt and pepper and a scant splash of red wine vinegar. Pour over a good-quality olive oil, mixing gently to combine. Allow to sit at room temperature while you prepare the bruschetta.

Under a hot broiler, toast bread on one side until golden brown. Turn and toast the second side until just starting to turn colour. Remove from oven and, working quickly, rub the cut side of the whole garlic clove all over the lightly toasted side. Top with crumbled chèvre, and return to the broiler until the cheese is starting to melt.

Serve topped with tomato salad and a final drizzle of olive oil.

Notes:
• This recipe can be done on a barbeque, grilling the bread first over medium high heat. To melt the cheese, turn the grill down to medium heat and close the lid, checking after 2-3 minutes.

Reviewing The Best



As promised, this is my first installment in my spotlight on five books from my recipe collection. I'll devote three entries to each book.

I came across the television show The Best when flicking by a BBC Canada preview one long weekend. Starring Ben O’Donoghue, Paul Merrett and Silvana Franco, the premise of the show was simple – two separate theme ingredients/meals would be set up as a challenge for each episode. The three would then prepare and present their interpretation to a cloistered group of judges. Some examples were; the best sweet summer tart, the best lamb lunch, and the best simple sandwich.

Though this may sound rather like an episode of Iron ChefThe Best could not be further from the Kitchen Stadium of Chairman Kaga. The hosts, two classically trained chefs (O’Donoghue and Merrett) and one experienced cook and food stylist (Franco), worked together with an easy competitive camaraderie. Each took on the duties of sous chef for the others, and there was frequent tasting and joking along the way.

It was the charm of the series that made me seek out the cookbook by the same name – which has fast become one of my favourite books for inspiration. The three authors, with their diverse backgrounds and influences, support and encourage my somewhat schizophrenic interests in cooking.

Merrett’s Perfect Cheese Soufflé and sublime Watercress and Mushroom Soup appeal to the part of me that likes a bit of fuss over a meal. His recipes can be a bit labour (and time) intensive, but the results are nothing short of show stopping.

O’Donoghue, proud of his Australian roots and classically trained, tempts me with fresh ingredients presented in laid-back style. His Summer Berry Compote and Braised Tuna Salad epitomize his philosophy on food – elegant yet gutsily straightforward, uncompromising in its quality.

Franco is a woman after my own heart. An accomplished food writer and stylist who has worked with the likes of Ainsley Hariott, she has not let acclaim change her views on food. Simplicity itself, relying on cupboard staples and no-nonsense preparations, dishes like her Chinese Style Barbecue Pork and Goat’s Cheese and Cranberry Toast offer immediate satisfaction.

The first recipe I’ve chosen to highlight is Ben’s Tomato and Herb Spaghetti from “The Best Quick Pasta Supper” episode. I love the combination of the velvety robust sauce against the herbaceous crunch of the pan gritata (toasted breadcrumbs) – all slurped up with perfectly cooked spaghetti. In the midst of summer I will admit that I sometimes substitute the canned tomatoes with peeled fresh ones, whenever I find myself in possession of some just about to pass their prime.

For the pan gritata:
4 tablespoons roughly chopped thyme leaves
4 tablespoons roughly chopped parsley
2 tablespoons roughly chopped majoram
1 small dried-out or day-old chibatta, made into rough crumbs
8 tablespoons sunflower (or other neutral) oil

For the tomato sauce:
1 garlic clove, crushed
3 tablespoons olive oil
800 g jar of San Marzzano plum tomatoes, or 2 x 400 g cans of plum tomatoes in their own juice, drained
1-2 bird’s eye chilies
500 g (1 lb 2 oz) pack best-quality durum wheat dried spaghetti
1 garlic clove, chopped
Salt and freshly ground pepper to taste

To make the pan gritata, first process the herbs in a food processor. Empty into a bowl, add the ciabatta crumbs and blend together using your hands.

Heat the sunflower oil in a frying pan and shallow-fry the herbs and breadcrumb mixture for 3-4 minutes, until crunchy. Drain on kitchen paper.

Make the tomato sauce by gently frying the garlic in 2 tablespoons of the olive oil for 30 seconds, until sticky. Add the tomatoes and chilies and cook for 30 minutes over a very low heat until broken down and the tartness has gone from the tomatoes.

Meanwhile, cook the pasta until al dente (according to the packet instructions) and drain. In a large frying pan, heat the remaining olive oil and add the chopped garlic. Toss through the cooked spaghetti. Then serve the spaghetti in a bowl with the tomato sauce surrounding it and season with salt and freshly ground pepper to taste. Sprinkle the pan gritata all over and serve.

Serves 4.

Notes
• In the case of the dish in the photograph, I happened to have fresh, finely crushed breadcrumbs around from another recipe. I opted to use them instead of the ciabatta, and tossed some through with the cooked pasta. For your first time making the recipe, I recommend using the ciabatta as instructed – the coarser texture adds another dimension to the dish.
• I choose to season the sauce with salt and pepper while it is cooking, rather than at the end.
• When I use fresh tomatoes, I reduce the cooking time for the sauce to about 15 minutes, as I like to preserve a bit of the freshness of the tomatoes.
• Although not mentioned in the recipe, I find that a bit of freshly grated Parmesan never hurt anyone.

The essence of home



I’ve been putting off writing this post. The topic seemed simple enough, but whenever I tried to come up with an answer to the question, I was overwhelmed.

“What does Canada taste like to you?”

Deciding on one taste that most embodies the Canadian experience is, in my opinion, nearly impossible. With a country of such physical size and cultural contrasts, to concentrate on one flavour would be to exclude the thousands of other culinary adventures there are to be had.

To me, Canada tastes like maple syrup on my father’s French toast. I think of a butter-drenched crab boil on one coast, and Asian-influenced seafood on the other. Summer evenings wandering the streets of Montréal, shopping for decadent Opéra cakes. The requisite hotdog from Toronto street vendors. Breakfast cooked over a campfire, with smoky bacon and biscuits baked in a cast iron pan.

Canada tastes as sweet as summer fruit, as hearty as pierogies and as complex as our world-renowned wines. Canadian food reflects our varied climates, our landscapes and our seasons – it is the expression of the way we have created communities in this immigrant nation, and suggests the direction of what is to come.

Despite my travels, I would wager to say 85% of all the meals I’ve ever eaten have been in Canada. Seeing that I’m now somewhat obsessed with food, my food adventures this country surely have been nothing short of inspiring. Though I am itching to continue to travel the world and try new things, Canada will always be home to me. There is enough to explore down the street, throughout the province and across the nation to sustain me for years to come.

Maybe it would be easier if I concentrated on what Canada Day tastes like to me?

That’s easy. Growing up in a city on the edge of Lake Ontario, Canada Day meant one thing, and one thing alone – the annual Lion’s Club carnival. Every long weekend for the summer, the Lion’s Club carnival would make its rounds through local fairs and festivals throughout our region. And Canada Day was when it would come to my city.

Along with the other kids in our neighbourhood, I would watch the workers set up the tilt-a-whirl, Ferris wheel, and midway down by the beach. Soon enough, you could smell the popcorn and the air would become heavy with the sweetness of cotton candy. Twinkling lights would greet nightfall, and we would wait for the inky blackness to blanket the lake completely – setting the stage for the evening’s fireworks display.

Inspired by those memories, I’ve created miniature sweet wonton cones filled with icewine-macerated strawberries. The strawberries come from a nearby farm, the wine from a winery down the highway, and the wontons are my nod to Canada’s distinct cultural heritage. It is seasonal, the ingredients are local, and there is a bit of kitschy humour – how very Canadian. And red and white on Canada Day - how can you go wrong?

Icewine strawberries in sweet wonton cones
My own creation, with apologies to Thomas Keller

Ingredients
1 pint strawberries
1/4 cup icewine
1 cup clarified butter
16 x 3 1/2” square wonton wrappers (4 are in case of mishap – and anyway, that is what my package contained)
2 tablespoons granulated sugar or Demerara sugar

Sweetened whipped cream, to serve

Speciality utensils
12 conical shaped metal forms (the type used for kulfi will do) or conical paper cups for water dispensers

Preheat oven to 350°F (175°C).

Hull and slice the strawberries, taking into account the size of your cone forms. Add the berries to a bowl and add the icewine. Stir lightly to combine, and refrigerate for at least two hours.

On a baking sheet, set out the metal forms or the paper cups. Brush each wonton on both sides with clarified butter. Wrap wonton wrappers around the cups to form cones, making sure to press the seams together. Twist the bottom to secure the point, if necessary. Lightly dust the cones with the granulated sugar, and bake for 7 minutes or until golden brown and crispy. Allow to cones to cool and remove from forms.

To serve, mound some of the macerated strawberries into your sugared cones, and top with the whipped cream.

Notes
• I used an Inniskillin 2002 Riesling Icewine for this recipe, thinking the floral apricot notes and bright acidity would complement the strawberries. Any icewine you enjoy would be suitable, or even a late harvest Vidal would be a great substitution, offering a bit of spice and sweet peach flavours.
• For Ontario readers, the LCBO does offer icewine in small bottles (a bit larger than hotel room minis). This size would be perfect to splash on a few berries, and are reasonably priced.
• I chose not to add sugar to the berries, but you may want to check for sweetness and add sugar accordingly.
• For the photograph, I used a non-sugared cone. It was terribly humid that day, and sugar was melting into a sticky mess. However, I would not suggest skipping this step as the wonton seems too savoury without this bit of gilding.
• The next time I make these cones, if I'm feeling particularly industrious that is, I think I would experiment with a tuile cone instead - if anyone experiments, please let me know!
